Principessa’s origins remain ambiguous even to those of us who have been making it for thirty years. Initially, it was not a wine meant to be sold, but a product created in extremely limited quantities, to be given as a present to friends, relatives, and loyal customers. After years of experimentation with the Traditional Method, however, our Principessa has evolved to have a well-defined character, different from other sparkling wines in circulation.
In the mid 2000’s, thanks to a renewal of the winery’s machinery and to an ever-increasing demand, Principessa became the sparkling wine we know, characterized by the transparent bottle, elegance with a delicate touch, fresh and immediate taste. A refined wine, but not exclusive. Enveloping, yet perfect for the daily aperitif ritual. In few years tens of thousands of bottles were sold and Principessa became the sparkling symbol of Emilia Romagna.
